#AskFedi My daughter and I made two batches of muffins following this recipe: chocolatecoveredkatie.com/carr
The first batch we replaced 1/2 the sugar with xylitol, the second batch we replaced all the sugar with xylitol but also added a little sugromax sweetener and salt to get the sweetness at the same level as the first batch.
The only other difference was that the first batch sat out of the oven longer because we forgot to preheat the oven. The result is muffins that taste almost exactly identical, the 1/2 sugar muffins were denser, and I prefer the texture of the sugar free muffins, but, I’ll let the pictures speak for themselves. The completely #SugarFree batch made these weird mountain or volcano shapes.
I know that when I reduce sugar it will change things in the recipe, but does anyone have a hypothesis for why they made this shape? I’d like to do a side by side with the same recipe but leave one batch to sit before cooking to see if that effected it. #Baking #food

Jam is yet to be determined. Either strawberry, apricot, raspberry or Rosella - or maybe just some honey…
