I found a solution.

made up an rsession.conf with
# R Session Configuration File
session-default-working-dir=/home/rstudio/project-name

and injected it in the image with:

WORKDIR /etc/rstudio
#copy rstudio initial instructions to override defaults
COPY rsession.conf rsession.conf

I will write a blogpost about this, since all the other posts I found are either old or not exactly for the use case I imagined. It works now. I'm happy.

Amiga disks on PC: Copy program G-Copy 0.7

Arne Urbaniak's copy program G-Copy can read and write Amiga ADF data on a Windows PC. G-Copy, which is visually similar to the popular X-Copy, supports the drive controllers Greaseweazle by Keir Fraser, ADF-Drive by D. Tonn or DrawBridge (Arduino) by Rob Smith.

Version 0.7 now supports copying from DF0 to DF0 and two Greaseweasle as DF0 and DF1, among other things.

TIL that I can copy paste from a terminal using CTRL+SHIFT+c and CTRL+SHIFT+v on Linux, after 18 years of daily usage.

When you don't have a mouse, it's so much easier than using SHIFT+INSERT or right click copy, right click paste.
