I had a little fun as it is the famous Hatch chili season. They are at peak less than 5-6 weeks so when they arrive in the stores here in Arizona from New Mexico it is a big event. And everyone scrambles to get the freshest to roast immediately. I learned how to roast them last year and this year it’s going easier. The pan here has a pile of both the mild and the extra spicy I have just peeled after charring them. They freeze well if they last that long. #Hatch #HatchChili #Roasted #Peppers
